Creamy Vegetable Medley

This Creamy Vegetable Medley is a delightful side dish that brings together a colourful mix of flavours and textures. With two cans of mixed vegetables, it’s a quick and easy way to incorporate veggies into your meal. The creamy base, made with condensed cream of mushroom soup and a touch of sour cream, adds richness, while a cup of shredded cheddar cheese provides a deliciously cheesy finish. Topped with crispy fried onions and a sprinkle of black pepper, this medley is both comforting and satisfying—perfect for any occasion!

Ingredients

2 cans mixed vegetables
1 can condensed cream of mushroom soup
1 cup shredded cheddar cheese divided
1/3 cup sour cream
80g fried onions divided
1/4 teaspoon black pepper

Directions

Step 1:
Pre-heat oven to 175°C.
Step 2:
Place frozen vegetables into a 2-quart saucepan. Add 1/4 cup water & bring to a boil over high heat.
Reduce the heat to medium-high, cover & cook for 9-11 mins, stirring occasionally. Drain.
Step 3:
Transfer vegetables to a large bowl. Add condensed soup, 1/2 cup cheddar, sour cream, 1/2 of the
fried onions & pepper; stir until wee combined. Transfer to a deep 9 inch pie plate & smooth the top.
Step 4:
Bake in the pre-heated oven for 30 mins. Sprinkle casserole with remaining cheddar & fried onions.
Bake until cheddar melts.
